Wild Venison Summer Berry Salad


Ingredients

 

Venison Medallions

  • 1 pack of Alpine Deer Wild NZ Venison Medallions

  • Salt & Pepper

  • 1 - 2 Croissants

Salad

  • 120g Baby Salad Greens

  • 1/4 cup of Chopped Walnuts

  • 1/2 cup of Goat Feta

  • 1 cup Fresh Blueberries

  • 1/2 cup of Pomegranate Fruit

Dressing

  • 1 Tbs Honey

  • 2 Tbs Balsamic Vinegar

  • 1/4 cup Olive Oil

  • Salt & Pepper

  • 2 Tbs Lemon Juice

  • Chilli Flakes (optional)


Method:

Prepare Venison:

Step 1: Ensure the Alpine Deer Wild NZ Venison is at room temperature and massage salt and pepper in to taste.

Step 2: Cook in a hot, preheated pan until desired level is reached. Put aside and let rest before slicing.

Step 3: Cook Croissants until stiff and then crumble to make croutons.

Dressing:

Step 1: Add all ingredients for your dressing to a container and mix. Add Salt & Pepper to taste.

Salad:

Step 1: Toss salad ingredients in a bowl with desired level of dressing.

Finally:

Top with your sliced Venison Medallions and croutons.

Alterations

  • Any greens can be used for the salad.

  • Blueberries and Pomegranate can be substituted for any fruit. We like fresh sliced Peaches and Raspberries. Other fruit can be added to create more flavor and color. They all pair well with our Alpine Deer Wild NZ Venison.

  • Walnuts can be substituted for other nuts or omitted

  • Goat Feta can be substituted for cow Feta or omitted.

  • Honey can be substituted for Maple Syrup.
